CAVA, a chef-driven fast-casual Mediterranean concept in Irvine will be expanding in Orange County--with two new locations: in Mission Viejo opening in spring 2018, and in Costa Mesa in the summer 2018. Founded by three first-generation Greek American childhood friends, Ted Xenohristos, Ike Grigoropoulos, and executive chef Dimitri Moshovitis with a desire to share the authentic flavors and hospitality of their upbringing.

CAVA features a build-it-yourself menu that is seasonally-inspired, completely customizable (salads, grain bowls or pitas) and is made from scratch in-house every day. The menu is specially created to deliver an ultra-personalized experience for every guest – featuring over 50 offerings and 58 million possible combinations of bold ingredients and flavors.

The Mission Viejo location at 27750 Crown Valley Parkway will be a 2,360-square foot space that will seat 50 guests inside, with an additional 20 seats on the exterior patio, and is looking to be a super cozy spot with a fireplace, landscaping and string lights.

The Costa Mesa location at 350 E. 17th Street is a 2,477-square foot space, with 38 seats inside and an additional 24-30 on the exterior patio.

Open 11 a.m. to 10 p.m. daily.
