Warehouse 72 Modern Bistro + Bar Opens in Irvine

Warehouse 72 Modern Bistro + Bar, a new upscale modern American restaurant just opened at the renovated Hyatt Regency Irvine. Reservations are available through OpenTable, with a Grand Opening celebration planned for mid-September.

Founded by Orange County native and restaurateur Doug Pak, Warehouse 72 offers an elevated dining experience focused on modern art, design, and American cuisine. The 6,200-square-foot indoor-outdoor dining space features a unique 30-foot LED digital art installation.

Executive Chef Jaime Salazar's seasonal food and beverage program emphasizes fresh, simple ingredients from vetted partners like Jidori Chicken and Salmon Creek Farms. The menu includes gluten-free, vegetarian, and vegan options, with dishes such as Steak and Eggs, Ube Pancakes, Black Truffle Arancini, Miso Glazed Wild Caught Seabass, and Australian Lamb Chops. Dessert options include Frozen S’mores, Polenta Cake, and Matcha-Coconut Milk Panna Cotta. The bar offers local craft beers, signature cocktails, an extensive wine list, and non-alcoholic beverages.

Happy Hour, available in the bar and patio from 4 pm - 6 pm Monday-Friday, features a limited and discounted menu with items like Prosciutto and Fig Flatbread, Kampachi Crudo, and Bone Marrow and Bourbon. The same ‘Late-Night’ menu will be available nightly in the bar area.

In addition to daily service, the restaurant will also offer prix fixe menus, private dining experiences, wine dinners, birthday and anniversary specials, corporate events, and catering. The restaurant is located at Hyatt Regency Irvine (17900 Jamboree Rd., Irvine, CA) and offers 3-hour validation for on-site self-parking. Warehouse 72 will be open seven days a week for brunch, dinner, and late-night.
