OC’s Egg-Cellent Easter Brunches

Looking for a delicious and special place to celebrate Easter and enjoy brunch? Several top hotels in OC are planning elaborate Easter brunches to make your holiday even more memorable.

Masterpiece Easter Celebration in the Grand Ballroom
Sunday, April 21, from 10 a.m. to 3 p.m.
This extravagant Easter holiday meal is a 12-Station Masterpiece Brunch family affair featuring live musical entertainment, a champagne toast and complimentary photographs to preserve the memories. Brunch-goers will receive entrance to the resort's annual Easter Egg Hunt. The Breakfast Station offers eggs benedict, scrambled eggs, Applewood smoked bacon and more.

There are also Omelettes Made To Order and a Waffle and French Toast Station. Charcuterie, grilled and marinated vegetables, cheese selections with accompaniments are Antipasto selections. There will be Santa Barbara smoked salmon, fruit choices, cream of asparagus soup and several salads, including Caprese, seasoned bocconcini and heirloom cherry tomatoes.

Sushi Station favorites feature shrimp tempura, vegetarian and California rolls and spicy tuna. There will be Seafood On Ice, a Carving Station with salmon en croûte, roasted prime rib and roasted rack of lamb.

The Children's Station will serve cheese quesadillas, corn dogs and more. And for sweets, the Desserts table is brimming with festively elaborate treats compliments of Executive Pastry Chef Lee Smith.

Easter Brunch at Studio
Sunday, April 21, from 11 a.m. to 3 p.m.

Once again Studio's Easter Brunch complete with panoramic Pacific views will be a memorable exquisite holiday meal. Chef Benjamin Martinek's First Course is a choice of either Baby Gem Lettuces with Easter egg radish, shaved carrot, spiced almond, avocado, and green peppercorn dressing; Seared Kona Kampachi with baby beets, smoked trout roe and horseradish yogurt; or Dutch White Asparagus and Lady Edison Ham with pecorino Toscano mousse and sea asparagus gribiche.

His Second Course offers a choice of Spinach Frittata with leek fondue, potato glass, and hackleback caviar; Dungeness Crab Hash with roasted Kennebec potatoes, spring onion, pasilla chile, poached hen egg and fines herbs; or Pissaladière with early girl shaved tomatoes, grilled ramps, white anchovies, gordal olives and lemon basil. Entrees are Alaskan Halibut En Croûte with smoked egg sabayon, sugar snap peas, golden chanterelle and sprouted barley; Mary's Farm Organic Chicken Roulade with garlic thyme pomme purée, morel mushrooms, green garlic, and buttermilk chicken jus; or Superior Farms Spring Lamb Saddle with lamb sugo, fava bean, squash blossom and shaved garrotxa. Cheese Quadrello Di Bufala with buckwheat tartlet, quince and truffle will follow, and Dessert is Dominican Chocolate Pot De Crème with salted caramel and bourbon or Pear Cheesecake with vanilla, poached and roasted pears and sorbet.

The Loft Easter Brunch

The Loft Brunch will be served early for those who want to get their full day started with delicious food served overlooking the ocean in a bright comfortable room, and it continues until 3 p.m. This special seasonal à la carte menu offers To Begin with California Avocado Toast with hard-cooked egg, cherry tomatoes, and arugula; Smoked Salmon Rillette with toasted bagel, whipped boursin, red onion, avocado and heirloom tomato; Organic Mixed Greens with orange-lavender dressing; or Burrata and Speck Ham with cantaloupe, sweet peas, pea shoots and mint.

There will be Pan Breads like Brioche French Toast and Apple and Mascarpone Crèpes with vanilla-bourbon caramel and Eggs such as Maryland Crab Cake Benedict with fingerling potatoes and chipotle hollandaise. Easter Features include Lamb Osso Bucco with spring pea risotto; Grilled Chicken and Brie Panini; and Pan-Seared Salmon with pickled ramps, morel mushrooms, and asparagus-English pea nage. Easter Desserts offers Pear Blackberry Crisp, Profiteroles and more.

The Egg-cellent Bar offers omelets made to order, scrambled eggs, Applewood smoked bacon, breakfast sausages, potatoes, and classic brioche French toast. The Bagel Bar features open-face warm brunch sandwiches like lobster salad, smoked salmon, avocado burrata and Nutella and bananas.

Oak Grill's Executive Chef Brittany Valles has baskets packed with delicious Easter brunch dishes planned for guest enjoyment and holiday celebrating. Of course, all should feel free to wear their Easter finest as they make their way around the Fireside Patio where they'll find live-action stations filled with traditional brunch favorites. The Cold Station is featuring fruits, granola parfaits, assorted pastries, cheese, and charcuterie platters, smoked salmon and spring vegetable salad, and an Omelette Station will serve up scrambled eggs, crab cake benedict, smoked bacon, sausages and breakfast potatoes. 

A scrumptious Pancake Bar includes lots of add-ons as well as waffles with fried chicken.
