Verde: A New Destination for California Cuisine and Crafted Libations

Fall 2024 marks the grand opening of Verde, a libation-focused dining destination at The Ranch at Newport Bay in Eastside Costa Mesa. Led by Koire Rogers and Anthony Laborin, known for their expertise in fine wines and innovative cocktails, Verde will offer two distinct spaces to enjoy a well-developed beverage program alongside California cuisine crafted by Executive Chef Paula Balderrama.

Verde’s two-story location features a main restaurant on the second level and a bar-focused venue below. The upper-level eatery will serve lunch and dinner with 70 seats, including 10 at the bar, in a space reflecting California's coastal elegance. With wood beams, a white stone bar top, and panoramic windows, it offers a vibrant, light-filled atmosphere.

The lower-level venue will seat 40 guests, including a 16-person banquet, providing an intimate ambiance for an extensive beverage program paired with bespoke food offerings. A vintage hand-crank Italian slicer will anchor the cheese and charcuterie program, complemented by a menu of raw dishes, tinned fish, and light fare served from 5 p.m. to midnight.

“Verde will be a dream come true for the true wine and cocktail enthusiast,” said Anthony Laborin. “The main restaurant will feature expertly crafted classics, while the lower bar will offer ever-changing cocktails and interesting wines.” Rogers and Laborin’s award-winning beverage team will select old-world wines to complement the ingredient-driven cuisine, with cocktails highlighting innovative techniques and seasonal flavors.

Executive Chef Balderrama, with experience at top SoCal restaurants like Pizzeria Mozza and Fable and Spirit, will create a menu celebrating local, sustainably sourced produce. Her approach will emphasize simplicity and sophistication.
