Ceviche Tasting at Ritz-Carlton
Ceviche, the delicious raw seafood dish cured in citrus juices and fresh peppers, a staple of coastal Central and South America, gets the royal treatment all month at the Ritz-Carlton, Laguna Niguel.
Chef de Cuisine Steve Wan shines with an a la carte Ceviche Tasting Menu influenced by the flavorful regions of Mexico, Peru and even Asia. Ceviche typically features Latin American flavors, but Chef Wan created an Asian-style ceviche with yuzu, white soy and ponzu.
His tasting menu features tuna, rock shrimp, sea bass and scallops, with ingredients such as ingredients as coconut, sweet chili, candied yam and crispy jicama. The Ceviche Tasting Menu is offered in RAYA, Bar Raya and 180blu, the resort’s outdoor oceanfront lounge.

Raya’s Pan-Latin Rock Shrimp Ceviche
Mixto Ceviche, a Peruvian classic
Central American-style Sea Bass Ceviche

Resident mixologist, Erin Snider, created several signature cocktails to complement Chef Wan’s ceviche selections.
The handcrafted cocktails menu includes:
Saki Cocktail – a perfect combination of refreshing flavors of mint and ginger, with lingering flavors of the Sake and pear
Caipirinha – made with Cachaca (a distilled spirit made from sugarcane juice) the most popular distilled alcoholic beverage in Brazil
Pisco Mule – light and refreshing with a hint of spice
Yuzu Sour – featuring hints of orange, fresh cilantro and a hint of Yuzu juice
Piloncillo Margarita – the Reposado tequia provides a smoky flavor that is balanced by the piloncillo (unrefined Mexican sugar)

Scott's Notable Wine Tour DinnersScott’s Restaurant & Bar is celebrating its 25th anniversary with two notable Wine Tour Dinners in September. These imaginative dinners will transport guests to the great wine regions around the world with creative pairings of wines and cuisine. On Friday, Sept.12, Scotts will present the wine region of France with a menu of broiled prawn, chili-mint pesto and hand-carved tomahawk steak with peppercorn sauce served with the Rhone wines of Guigal.
On Friday, Sept. 26, the wine region of Italy will be celebrated and will include rotolo of veal with prosciutto and pine nuts, and slow braised osso bucco, maitake ravioli served with wines like Tuscan Sassicaia.
