A Night in White: Fumanelli Wine Dinner at Paséa Hotel

Guests are invited to the new Paséa Hotel & Spa in Huntington Beach on Thursday, Oct. 6 from 6:30 to 7:30 p.m. for a seaside evening in all-white attire as they featuring fine wines, a perfectly paired four-course, gourmet menu and live entertainment under the stars.
Two powerhouse winemakers – Armando Fumanelli from Marchesi Fumanelli of Verona, Italy and Garrett Busch of Trinitas Cellars of Napa Valley will collaborate to showcase their exquisite wines with dual pairings alongside Italian-inspired cuisine prepared by Paséa’s Executive Chef Kevin Meyer.
The Wine Reception and Entertainment is at 6:30 p.m. to 7:30 p.m.; followed by the Gourmet Dinner with Parallel Wine Pairing from 7:30 to 9:30 p.m. The price is $150 per person.

Fumanelli + Trinitas Wine Dinner Menu
Passed Hors d’ Oeuvres: Togarashi Tuna, Pickled Shallots and Cucumbers, Sesame Tuille; Lamb Chops, Charred Spanish Onions, Chimichurri Salsa; and a Tuscan Ratatouille Tart with Pesto Cream. The first course is Thyme and Honey Scented Duck Breast, Marcona Almond Bavaroise, Endive and Persimmon Compote. The Fish Course is Grilled Alaskan Halibut with Oxtail Tortellinis, Butternut Squash, Brussels Sprouts and Red Wine Jus. The Beef Course is a Dry Aged New York Steak, Smoked Parsnip Puree, Nantes Carrots and Bordelaise Sauce.
The Dessert course is Dark Chocolate Cake with Hazelnut Cream, Clove-Raspberry Compote, and Hazelnut Crunch.
