ENJOY A FOUR-COURSE MENU ON VALENTINE’S DAY at the Ranch

THE RANCH Restaurant & Saloon known best for its elevated interpretations of American and traditional cuisine and an extensive list of exclusive wine and whiskey will celebrate Valentine’s Day with a special four-course dinner on Wednesday, Feb. 14. Crafted by Executive Chef Michael Rossi, the menu features a variety of dishes prepared from scratch, with produce sourced from the restaurant’s own local heirloom farm. The four-course dinner starts at $95 per person and includes:
FIRST COURSE: choose from Asparagus Hummus with Feta, Piquillo Peppers, Hazelnuts and Pita; or Country Fried Petaluma Quail with Brussels Sprouts, Applewood Smoked Bacon, Fuji Apple, Agave Mustard; or Porcini Mushroom Ravioli with Artichokes, Bellwether Farms Crescenza, and Black Truffle. Or, for an additional $20, choose Ocean Jewels with Fresh Kiss Oyster, Jumbo Shrimp, Ahi Tuna Poke, and Alaskan King Crab.
SECOND COURSE: Choose from a Baby Spinach Salad with Bosc Pears, Fourme d’Ambert Blue Cheese, Pistachios and Sun-Dried Cherry Vinaigrette; or Dungeness Crab & Champagne Bisque with Fennel, Leeks and California Olive Oil.
MAIN COURSE with Certified Sustainable Chilean Sea Bass and English Peas, Pearl Onions, and Nantes Carrots; or 24-Hour Braised Cape Grim with Tasmanian Grass-Fed Beef Short Rib with Fiscalini White Cheddar & Poblano Mac & Cheese, Cabernet Reduction; Beeler’s Family Farm Pork Tenderloin with Sweet Potato Polenta, Golden Raisins, Pecans, and Collard Greens; or, ‘Surf & Turf’ with Aspen Ridge Petite Filet & South African Lobster Tail – an additional $30, with Smoked Tomato Risotto, King Trumpet Mushrooms, and Broccolini.
DESSERT: Choose from Republica Del Cacao Flourless Chocolate Cake with Raspberry and Mango Sorbet: or Meyer Lemon Panna Cotta with Olive Oil Cake and Tangerine Granita; or Strawberry Cheesecake with Passion Fruit and Jasmine Sorbet.

The Ritz-Carlton, Laguna Niguel Donates $35,000 to Surfers Healing to Support Children

More than $35,000 was donated to Surfers Healing as a result of The Ritz-Carlton, Laguna Niguel’s Annual Holiday Surfboard Auction and SUP/Surfing Santa Competition. Surfers Healing is a foundation for autism that hosts free surf camps that introduce children with autism and their families to the therapeutic properties of surfing. Last year, Surfers Healing took more than 5,500 children surfing during surf camps held across the country from Malibu and Doheny Beach in California to Wrightsville Beach, NC and Toronto, Canada.
The collection of donated surfboards were auctioned off and over the years has highlighted boards from well-known artists like Wyland, Darren Le Gallo, West Rubinstein, Dana Louise Kirkpatrick, and Sage Vaughn, musicians such as Donavon and the Red Hot Chili Peppers, and personal boards from surf legends including Greg Long, Andy Irons, Shawn Dollar, Laird Hamilton, Garrett McNamara and Kelly Slater, to name a few.
Developed by The Ritz-Carlton, Laguna Niguel’s General Manager Bruce Brainerd, the two seasonal events have helped contribute nearly $350,000 to Surfers Healing.
