The Wonders of Watertable Food & Drink

It’s no wonder that the hottest new restaurant to open in Huntington Beach is at Orange County’s premier beachfront resort, The Hyatt Regency Resort & Spa. The grand reveal of the Watertable restaurant and gastro bar just debuted with a sophisticated and contemporary design and delicious West Coast cuisine from Executive Chef Manfred Lassahn.

The new Watertable is essentially a homey and rustic restaurant with a warm library, a gastro pantry and bar that serves breakfast by day and cocktails by night, a living room with brilliant firewall and small tables for lounging, a family kitchen where you can enjoy a daily breakfast buffet and an outdoor patio with stunning ocean views. You can’t miss the showcase, Water Table, between the bar and living room, where the restaurant’s name is derived. The striking fountain is where glass tubes of filtered water flow from the ceiling down through a series of vessels for servers to fill bottles for diners.
 
Watertable features seasonal, regional, grill-centric innovative contemporary American fare paired with a vintage world-class wines, artisanal cocktails and local brews.
 
Signature dinner items include our favorite honey lavender Berkshire pork porterhouse and seared diver scallops with lemon butter sauce, Sturgeon roe and cold smoked heirloom tomatoes.

Later this summer, the restaurant will feature a classic Southern style “Sunday Supper” where guests can enjoy a communal experience with a “comfort inspired” main dish served alongside the table’s choice of creative sides and endless cheddar sage biscuits and apple butter.
 
Dinner may start with a variety of small plates such as “Bar Jars” filled with house-made marinated cheeses, spreads and other bites served directly from shareable mason jars. The selections include oven-cured tomatoes with sherry and artichoke and Manchego cheese spread.
 
Additional Spanish-influenced hot bar appetizers include charred prawns in romesco, potato and corn empanadas and lamb meatballs with mojo verde.
 
Breakfast includes gourmet grab-and-go specialties, including Chef Lassahn’s Avocana Bread Jars—healthy banana bread made with avocado in lieu of butter—baked in a portable glass jar, house-made granolas, fresh pressed juices, grilled french toast and savory egg dishes.
 
The lunch menu is split into three categories—Bites, Greens and Liquids—for quick, simple and nutritious options, along with rotating daily specials and pressed artisan sandwiches.
