Orange County's culinary scene continues to thrive with the opening of The Peel Craftbar & Kitchen in Orange, located at Hotel Fera, a DoubleTree by Hilton. This new establishment offers a chef-driven menu that celebrates fresh flavors, local ingredients, and global influences, redefining coastal California cuisine. With its inviting atmosphere and focus on luxury hospitality, The Peel aims to be both sophisticated and welcoming, serving as a neighborhood gathering spot.
Upon entering, guests are greeted by a striking U-shaped bar that sets the vibrant and energetic tone of the space. The restaurant embraces Southern California's favorable weather with a retractable window at the main bar, enabling outdoor seating, and floor-to-ceiling windows that bathe the interior in natural light. An expansive patio, adorned with lush greenery, a captivating water feature, and cozy fire pits, provides an ideal setting for alfresco dining.
Executive Chef Luis Martinez leads The Peel's modern culinary vision, crafting progressive coastal California dishes from scratch. The seasonal menu showcases an array of approachable yet bold flavors. Chef Martinez's Mexican roots influence dishes like the Peel Fish Tacos with Sour Orange Adobo and the Horchata Ice Cream featured on the dessert menu. The restaurant takes pride in its in-house made sauces and dressings, accentuating each dish with distinctive flavors.
Sustainability is a core focus for Chef Martinez, who carefully sources naturally raised proteins such as Skuna Bay Salmon and Mary's Free-Range Chicken, both from family-owned businesses. The menu features thoughtfully selected ingredients, including PEI Mussels, USDA Prime Beef, and Applewood Smoked Bacon.
The dinner menu promotes a shared dining experience, offering a diverse selection of global flavors presented alongside local influences. Start with Shareable Bites like flatbreads, California Hummus, or a Mediterranean Charcuterie Board. Leaves & Greens and Power Bowls showcase farm-fresh produce and seasonal ingredients. Larger Bites include favorites like The Butcher Boy Burger, Mary's Fried Chicken Sandwich, Cuban Slow-Roasted Pork BBQ Sandwich, and The Parisian Steak Sandwich.
To complement the culinary experience, The Peel offers intriguing signature cocktails that blend contemporary and traditional elements. Using house-made syrups, fresh juices, and a variety of fruits, vegetables, peppers, and herbs, the drinks deliver immediate flavors and highlight the purity of ingredients. The beverage menu also includes an extensive selection of wines by the glass and bottle, featuring both boutique wineries and recognized labels. Craft beers from local and regional breweries complete the offerings.
