Inspired Ways & Means of Eating

Orange County, meet Ways & Means, the newest inspired eatery to open in Old Towne Orange, this time it's seafood-centric and helmed by United Culinary Artists founder Parnell Delcham who opened acclaimed concepts such as 25 Degrees, Public Kitchen & Bar, and Asia De Cuba along with Michelin-starred Chef Conrad Gallagher whose impressive culinary background includes working in top kitchens in London, Ireland, South Africa, and New York.

Ways & Means made its debut last week in the former A-frame Coco’s Bakery on E. Chapman Avenue, now it's dramatically transformed into an East Coast-style seafood shack with a West Coast relaxed atmosphere.

Delcham and Gallagher are on a mission to offer an exciting gourmet experience for all, from shares plates, entrees and sides, to a cocktail with an oyster sampling at the bar. Gallagher’s inventive, evolving menu will showcase global cuisines and seasonal Southern California ingredients. Even in the ealry morning hours, Gallagher’s a regular fixture at local docks selecting fresh, sustainably caught seafood for the day.

Choose from a rotating mix of East and West Coast oysters, as well as raw seafood cocktails and towers. The dinner menu offers shared plates like Caesar salad with baby cos, crab meat, Scotch egg, and sourdough; and Kataifi-style crab cakes with cilantro, Meyer lemon, and celeriac remoulade. Gallagher’s signature main dishes include seared ahi tuna with wasabi sesame crust, served with wok-fried shiitake mushrooms, beansprouts, bok choy, enoki, and tofu wontons; and wild salmon with red pepper couscous, ratatouille, saffron aioli, and zucchini flowers; as well as grilled premium 40 day aged steaks, fish, and lobster, served with a choice of sauces. Guests can also enjoy side dishes such as charred Brussels sprouts with capers, red onion, and Serrano ham, or corn on the cob with smoked chili butter and cilantro.

Ways & Means also offers elevated takes on classic cocktails such as Mai Tais and Daiquiris, as well as premium beers, a curated wine list with accessibly priced global and coastal wines.

Open 11:30 a.m. to 10 p.m. Monday to Wednesday; 11:30 a.m. to 11 p.m. Thursday and Friday; 5 to 11 p.m. Saturday; 9:30 a.m. to 10 p.m. Sunday.

Seabirds Food Truck Goes Brick and Mortar

Fans of the award-winning Seabirds Food Truck (nominated for the 2013 Golden Foodie Awards in the Best Vegetarian Cuisine category) can now get their famous vegan cuisine anytime at the new Seabirds Kitchen, a brick and mortar spot at the front gardens of the LAB in Costa Mesa, complete with a communal table made from a century-old East Coast wharf. It’s currently serving a seasonal fall lunch and dinner menu including Chopped Bounty, Good Fu Yu salads and Holy Smokes Bowl.

The organic, plant-based vegan menu offers quesadillas, small plates and sides, salads, tacos, bowls and a daily selection of desserts. Biodynamic and organic wines and craft beers are also available.
